Thyme on the Square, a new restaurant located in the historic J.A. Jennings Building in downtown Brooksville is already building a reputation for their fried pork rinds which can be spiced with your choice of their signature seasonings. The restaurant serving lunch and dinner, has no qualms about serving from the lunch menu at dinnertime. They also offer homemade egg nog or mocha cappucino flavored ice cream. At the bar you can order beer, wine, and a variety of wine mixers.

The owners Dee Hurlburt and Charles Mattingly are siblings from Louisville Kentucky, where Chef Charles gained 30 years of cooking experience. Chef Charles says everything he cooks is fresh and homemade and does not use frozen ingredients. His sister Dee Hurlburt manages the restaurant and hopes to eventually be able to expand and get a full liquor license. She also plans on doing a Sunday family style dinner. Dee and Charles are excited to be a part of the Brooksville Family.
