Fujiyama Japanese Steakhouse is an upscale restaurant. They have hibachi grills where the chef cooks at your table or regular tables where they provide Japanese fare. They also have a sushi bar where you can watch the chefs prepare your sushi.
Fujiyama started in Melbourne, Florida in 2007. They currently have a restaurant in Brooksville, Florida and another in Vero Beach, Florida. The Brooksville, Florida restaurant is located in a beautiful building on Cortez across from High Point.
Fujiyama is open for lunch and dinner seven days a week. They have a large facility with lots of rooms that can be used for an intimate gathering.
We tried the calamari and the lunch specials: the sushi and the sashimi specials. The sushi special allowed you to pick two sushi rolls from a list of a couple dozen rolls. We ordered the Mexican roll and the spicy tuna roll. The sushi rolls were well made and held together nicely. There was plenty of high quality fresh fish in the rolls and sashimi. The sashimi lunch special came with 8 pieces of fish. It had tuna, salmon, yellowtail, and white tuna. Both of the specials came with miso soup and a salad. The ginger salad dressing is excellent. The calamari was crisp on the outside and tender on the inside. It came with a sweet and spicy sauce which complimented it well.
