For an excellent authentic Indian meal in Hernando County, look no further than the Taj on Cortez Blvd. Their menu is extensive and the prices reflect the quality of food you are served. Taj is related to the Taj Indian Cuisine restaurant in Tampa.
Taj Indian Cuisine is located in the Western Way plaza near Beacon Theatres. It has been there for several years. The restaurant has a large interior and can handle a pretty large party.
We ordered the Vegetable Samosas appetizer which is two deep fried triangles stuffed with potatoes and green peas. It also comes with chutney. 
They have a thin tortilla like chip that they provide to the table along with a sampling of dips, including a dip with mint finely chopped, and a red slightly spicy pepper dip.
Tandoori Barbecue is one of their specialties. The name Tandoori comes from the tandoor clay oven that is used to make the barbecue. The food is marinated with yogurt and seasoned with the spice mixture that contains chili or cayenne pepper and turmeric. These spices give the barbecue the signature bright red and orange coloring on the outside of the meat.
We ordered the Tandoori mixed entree which is a sampler that includes tandoori chicken and shrimp. It also included chicken tikka and seekh kabab and comes with nan. The seekh kabab was slightly dry, but the rest of the meats were cooked perfectly. The chicken was excellent. 
We also tried a chicken curry and a lamb bhuna. Each entree came with an order of rice. Both dishes were moderately spiced and very tasty; the lamb and chicken was tender and moist. You can choose the degree of heat desired for your entree.
The entrees are served on beautiful metallic platters. All in all, the food tastes as good as it looks.
